THE TREES OF A CENTURY
High on the hills of Zgharta, a century-old grove stands quietly between stone terraces and cold northern winds. These Souri olive trees – about a hundred years old – were planted by our grandparents as a promise to the land. Today, they still carry the same energy, rooted deep in limestone soil and nourished only by rain and time.
Terroir Blanc captures this vitality. An early-harvest, vibrant, golden extra virgin olive oil with the purity of the mountain air and the strength of young heritage trees.
The Story
These 100-year-old trees are considered “young elders”, old enough to carry heritage, but still full of sharp character and intensity. Their fruit grows with a bright green profile thanks to the rich limestone soil, low altitude, and cold nights of North Lebanon. During harvest, we pick the olives by hand in the early hours, while the fruit is still firm and green. Within hours, the olives are cold-pressed at our partner mill to preserve polyphenols, antioxidants, and the fresh aromas specific to our terroir.
Terroir Blanc is the expression of purity & balance. It is our most vibrant oil; fresh, crisp, and unapologetically gold.
